Chilies have added mouth-tingling taste to foods for 9,000 years. They contain capsaicin, which is the source of their fiery flavor. Wear rubber gloves while working with hot chilies, or at least be careful. If you get a chili burn on your skin, rinse with a mild bleach solution, which makes the capsaicin water-soluble. If you scorch your mouth, drink orange juice or any milk product - Haagen-Dazs will do nicely. It is best to store chilies in airtight containers in a cool, dark place.
